Blueberry Lemon Tea Sandwiches
For a pretty presentation, use a pastry bag to swirl the lemon spread on the round and top with a fresh blueberry.

Ingredients:
4 oz Cream Cheese, softened
3 Tablespoons Lemon Curd
6 slices wheat bread
Fresh blueberries

In the bowl of an electric mixer, beat the cream cheese until whipped. Slowly mix in lemon curd and beat until incorporated.

Using a 2 inch round cutter, cut bread into 18 – 24 circles. Spread or pipe lemon cheese mixture onto circles, top with 1 or more blueberries. Serve chilled.

Yield: 18-24 sandwiches
