Eclipse Cookies

These cookies were voted 3rd best in our 1st Annual Cookie Contest. One taste and you will see why the top 3 cookies were separated by the smallest of margins!

Ingredients:

Cookie:
2 1/2 cups All purpose flour
1 2/3 cups Granulated Sugar
1 cup Butter
2 whole eggs
2 tablespoons Fresh orange juice
1 tablespoon Lemon juice
1 teaspoon Freshly grated lemon zest
1/2 orange Zested
1 1/2 teaspoons Cream of tartar
1/2 teaspoon Baking soda
1/2 teaspoon Baking powder
1/2 teaspoon Salt


Glaze:
2 cups Powdered sugar
3 tablespoons Lemon juice
3 tablespoons Orange juice
1 cup Dark chocolate, chopped, melted

Preheat Oven: 3750F
Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.

In a medium bowl, combine the flour, baking powder, baking soda, cream of tartar and salt. Whisk until ingredients are combined. Set aside.

In a medium mixing bowl, combine butter and sugar. Beat until light and fluffy, about 3 minutes. Add the eggs one at a time. Add the orange juice, lemon juice, orange zest and lemon zest. Beat until combined.

Stir in dry ingredients. Spoon the dough (about 1 tablespoon for each cookie) onto the baking sheets. Bake for 12-15 minutes, until slightly golden at the edges. Remove from the oven and let the cookies rest on baking sheet for 2 minutes. Move to wire rack and cool completely.

Glaze:
Combine the powdered sugar, orange juice and lemon juice in small bowl and whisk until smooth. Spoon about 1/2 teaspoon onto each cookie and smooth out. Let gaze harden for 5 minutes. Drizzle cookies with dark chocolate and let the cookies set up.
