Pesto & Tomato Rounds

These easy sandwiches are delicious any time of year, but when the tomatoes are fresh off the vine – they are like a true taste of summer.

Ingredients:

  • 1 small jar Pesto
  • 6 Plum Tomatoes (sliced) Shredded Parmesan Cheese 12 slices wheat bread

Directions:

  • Using a 2” round cookie cutter, cut wheat bread into rounds (avoid using the crust)
  • Spread a thin layer of pesto on rounds.
  • Top each round with a slice of tomato.
  • Garnish with shredded parmesan cheese.

Serve immediately

Note: To make ahead, do not garnish. Instead place in an airtight container and cover sandwiches with a damp paper towel. Keep refrigerated up to 2 hours. Garnish with parmesan cheese when ready to serve.
