Potato Chip Cookies
These buttery cookies have a light crunch with the addition of potato chips. They are delicious with a nice pot of tea. Although you might be tempted to make a larger cookie, keep them small as they can be fragile.

Ingredients:
1 lb. butter, softened
1 c. sugar
3 c. flour
1 ¼ tsp. vanilla
1 ½ c. crushed potato chips
Powdered sugar

Directions:
Preheat oven to 325.
Lightly grease cookie sheet (or use parchment paper).

Cream butter and sugar together with mixer. Add vanilla and slowly add flour. Using your hands blend in crushed potato chips. Using a small cookie scoop, scoop dough onto cookie sheet. Bake for 12 minutes or until light golden brown.

Dust with powdered sugar just before serving.
