Strawberry Tea Bread

Makes 2 loaves
Prep time: 10 minutes (not including thawing time)
Bake time: 1 hour 10 minutes (1 hour on 3250 convection)


Ingredients:

2 packages frozen strawberries (total 20 oz)
4 eggs
1 cup vegetable or canola oil
2 cups sugar
3 cups all purpose flour
1 Tablespoon cinnamon
1 teaspoon baking soda
1 teaspoon salt
1 ? cups chopped nuts (Optional*)

Preparation

Grease & flour 2 (9 X 5 X 3 in) loaf pans**

Defrost strawberries. Sift together flour, cinnamon, soda and salt into a mixing bowl set aside. Beat eggs in a bowl until fluffy and lemon colored. Add cooking oil, sugar and defrosted strawberries. Mix until blended. Add the strawberry mixture to the flour mixture and stir with a wooden spoon until well blended. Stir in nuts.

Pour into greased and floured loaf pans.

Bake in a 3500 oven for 1 hour 10 minutes or until a toothpick inserted in center of loaf comes out clean. Cool in pans for 10 minutes, then turn out of pans and cool on racks.

Notes
*Try using sliced almonds saving a few for top of bread. Before baking, brush bread with egg white, sprinkle with coarse sugar and sliced almonds.
